Stir fried spicy pumpkin

Ingredients:

1 clove of garlic, chopped
1 tsp dried shrimp
2 small chili paddy
300gm pumpkin, cut into square size
1 cup water

Seasonings:
1/4 tsp salt
1 tbsp sugar

Methods:
1. Stir fried garlic by using non-stick pan until it turn into golden brown color. Add in dried shrimp and chili paddy.
2. Add in pumpkin and water, mix well with seasoning. Covered and simmering until the pumpkin become soft and slightly mushy.
3. Cook until the gravy is thicken.
4. Serve with plain rice.

Vanilla Cheesecake

Vanilla Cheesecake

Ingredients;
8 pcs digestive biscuits
50g melted butter
250g cream cheese
1 cup thick vanilla yogurt
60-70g sugar
2 tbsp gelatin
1/4 cup of water
1/2 tsp of vanilla essence

Methods:
Stage 1:
1. Crush biscuits and put into blender to make it become smooth and powdery.
2. Mix biscuits crumbs and melted butter in a bowl until well combined. Then put into a baking tin.
3. Cut out a plastic bag and cover it over the crumbs. Use both your hands/ a presser to press the crust evenly and firmly over the bottom of the baking tin.
4. Cover with cling wrap and refrigerate.

Stage 2: To make the filling:

1. Dilute gelatine powder with water in a small bowl. Set aside.
2. Beat cream cheese and sugar until soft and creamy.
3. Transfer the diluted gelatine powder together with the bowl into a sauce pan filled with some water. Heat up the sauce pan under low heat. Stir the diluted gelatine powder until fully dissolved. Then pour it into mixture and mix quickly.
4. Add in vanilla essence, mix welland set aside.
5. Fold in yogurt into mixture until well combined.
6. Spoon the filling onto the crust (prepared in stage 1). Smoothen the surface. Cover with cling wrap and refrigerate for at least 3-4 hours (best overnight) until firm before serving.

Home made Pizza

Home made Pizza

Ingredients for 2:
2 pcs pita breads
4 tbsp spaghetti mushroom sauces
200gm boneless chicken breast, cubed
3 pcs canned pineapple with juices
1/2 tomato
1 pcs pinic ham
shredded mozzarella cheese

Seasonings:
a pinch of salt
1 tbsp brown sugar
4 tbsp canned pineapple juice
garlic and onion

Methods:
1. Add oil to non stick pan, brown chicken and cut into cubes cook until no longer pink.
2. Add entire can of pineapple juice, brown sugar, garlic and onion to pan
3. On medium high heat boil the ingredients down until you caramelize the chicken. Remove from heat
4. Put sauce on pita bread. Spread chicken mixture evenly on pizza, place pineapple bits and ham sparingly on top of chicken mixture then top with cheese
5. Baked in preheated oven for 5 minutes.

Stir Fried Chicken with Dark Soy Sauce



Ingredients:
200g boneless chicken thigh, cubed
1 tbsp chopped garlic
1 tbsp soy sauce
1/2 tbsp oyster sauce
1/2 tbsp dark soy sauce
1 tbsp corn starch
3-4 tbsp water

Methods:
1. Marinate chicken with soy sauce, dark soy sauce and oyster sauce for 10-15 minutes.
2. Heat up cooking oil and stir fry garlic until fragrant and turn into golden brown color. Add in chicken and stir fry for few minutes. Cover with a lid for 5-10 minutes with stirring in between.
3. Thicken the sauce with corn starch until the consistency that you prefer. Serve with steamed rice.

New York Cheesecake


Ingredients
6 digestive crackers, crushed
20g butter, melted

250g cream cheese
90g sugar
60g milk
1 1/2 eggs
70ml thick and creamy yogurt
1 tsp vanilla extract
10g plain flour

Methods

1. Preheat oven to 175C.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of baking pan.
3. In a large bowl, mix cream cheese with sugar until smooth.
4. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate.
5. Mix in yogurt, vanilla and flour until smooth. Pour filling into prepared crust.
6. Bake in the oven for 1 hour.
7. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking.
8. Chill in refrigerator until serving.

Fried Fish with Garlic

Ingredients:
400g grouper fishtail (chopped into pieces)
60g garlic (minced)
60g young ginger (chopped)
5 cili padi (diced)
5 lady fingers or okra (halved)
1/4 carrot (sliced)
1 tbsp taucheo
200ml water

Seasoning:
1/2tbsp soy source
1/2 tbsp dark soy source
1/2 tsp sugar
1/2 tbsp chinese cooking wine

Methods:
1. Heat wok with little oil. Fry ladies fingers briefly. Dish up and set aside.
2. Heat wok with three tablespoons of oil. Saute garlic and ginger. Toss in cili padi, fry well and add in taocheo.
3. Add in fish, turn to medium heat, fry well. Add in water, seasoning and cook over low heat till fish has cooked through. Ensure fish does not stick to the wok.
4. Add in ladies fingers and carrots. Taste and dish up.

Minced Pork with Salted Egg Soup



Ingredients:
90-100g minced pork
150-200g siao pai cai
1 whole salted egg
1L water

Seasonings:
1 tbsp corn flour
1 tbsp soya sauce
1 tsp oyster sauce
dash of pepper

Methods:
1. Mix all seasoning in minced pork and marinate for 5-10 minutes.
2. Boil water in a pot. Scope the minced pork with a spoon and add into boiling water.
3. Add in vegetables and salted egg. Serve with plain rice.

Almond Chocolate Cookies

Ingredients (14 Serves):
125g wheat flour
4g cocoa powder
2g baking powder
½ g baking soda
35g icing sugar
25g almond ground
⅛ tsp table salt
10g custard powder
65g salad oil
⅛ tsp vanilla essence

Method
1.Combine all dry ingredients in a mixing bowl.
2.Add in salad oil and vanilla essence. Mix well to form dough.
3.Divide dough into 20gram each, arrange well on baking tray and flatten the cookies.
4.Bake at temperature of 180C for 25 minutes.

Pork with Tung Choy

Ingredients:
80-90g minced pork
3 tbsp tong choy (washed)

Seasonings:
2 tbsp soy sauce
1 tsp oyster sauce
1 tbsp corn/tapioca flour
dash of salt and pepper (optional)

Methods:
1. Mix all seasonings and tong choy into minced pork.
2. Put it in a bowl and pour in some water (to serve as gravy).
3. Steam for 10-15 minutes and serve with plain rice.

Simple claypot rice in rice cooker

This is the second time to try cooking claypot rice in rice cooker. The first experience was bad where the rice was too watery and lumpy. But surprisingly, today was success. A simple, easy and quick meal for today dinner..

Ingredients for 2:
1 cup of rice and 1 cup of water
2-3 cloves of crashed garlic
100g of chicken or meat seasoned with soya sauce and oyster sauce
1/2 teaspoon dried shrimp
1 medium cheesy pork sausage
150g broccoli

Seasoning:
1/2 tablespoon soya sauce
1/2 tablespoon oyster sauce
1/2 tablespoon dark soya sauce

Methods:
1. Add all ingredients and seasoning into uncooked rice, except sausage and broccoli.
2. Cook into rice cooker.
3. Before the rice is fully cook, add sausage and broccoli on top of rice. Cover well and continue until fully cook.
4. Enjoy when it is still hot.

Maybe will add more things next time, e.g. mushroom, yam, pumpkin or put an egg on top of rice. Now, I'm thinking whether can I cook baked Hawaiian rice or oatmeal raisin muffin with rice cooker? Can't wait to get a oven for baking..
